Ingredients
- 2 cups flour
- 1 TBSP baking powder
- 1/4 tsp salt
- 3 TBSP melted butter
- 1/4 cup milk
- 1/2 cup water
- 3 TBSP coconut oil for cooking
Instructions
Mix together your flour, baking powder, salt, melted butter, milk, and water until a soft dough is formed.
Preheat your pan on medium-low heat with 3 TBSP of coconut oil.
Divide your dough into 8 even sized balls, then flatten to shape as an english muffin.
Cook the english muffins in a pan with a lid until golden brown on each side, flipping halfway through.
Remove from pan, and allow to cool before cutting.

How should the english muffins look before cooking?
Your dough will be a soft dough that should be rolled into a ball before flattening into a round shape.
The english muffins will rise when baking in the pan — this will be helped greatly if you use a lid on your pan while cooking!

It’s important to use a lid on your English muffins — this helps cook them completely!
If you don’t use a lid and find that your English muffins are not completely cooked in the middle, you can bake them in the oven for 5-8 minutes after cooking on the stovetop to finish cooking the centers.
If you don’t have a lid for your pan, that’s okay! Just cook them on low heat, and account for a little extra cooking time to make sure they cook all the way through.
